This amazing and easy mint ice cream recipe is a great treat for the hottest days of the year. We love to use the girl scout cookies that we buy since they’ve got such an amazing mint flavor! If you’d like to use other cookies, you can, but we’d recommend getting some of these great ones!
We love to use the combination of the spearmint flavor from the cookies and the peppermint flavor from the extract to give us a fantastic balance between those two extremes – cooler and hotter. Combined, they make for an ice cream that has a real depth of flavor – that’s something you just don’t see too often!
If you’d like to mix this up, then you could try adding a few sprinkles of your other favorite girl scout cookie – perhaps something with chocolate or vanilla. This would make the overall dish all the tastier, and would be hard to say no to! Mint and coconut are also a wonderful combination, so perhaps try to hunt down some macaroons – that would surely make for a lovely dessert.

Mint Ice Cream Recipe Using Ice Cream Maker
This Mint Ice Cream is a very taste one. It is made from peppermint extract, mint girl scout cookies and other basic ingredients for ice cream. The recipe is also an easy one. It only takes a few minutes to prepare it while freezing might take a while. Provided with all the ingredients and you should be good to go.

1 cup whole milk
2 cups heavy cream
¾ cup sugar
Pinch of salt
2 tsp peppermint extract
1 ½ cups crushed Thin Mint Girl Scout cookies – this is about fifteen cookies.
Method
Put the milk, cream, sugar, and salt into a small heavy-bottomed saucepan. Cook the mixture over medium heat, and make sure to stir it occasionally to dissolve the sugar.
When you see the first wisps of steam on the surface of the mixture, remove it from the heat. It’s critical not to let it boil – so watch carefully!
Pour the mixture into a shallow pan or bowl and put it in the fridge to chill thoroughly – this should take one to two hours.
When the mixture is cold, stir in the peppermint extract. Pour it into an ice cream maker and then process it according to the instructions of the machine itself.
In the last few moments of the processing, add the cookies – this will ensure they’re mixed in, without being crushed during the process.
Using a rubber spatula, transfer the easy mint ice cream into an airtight, freezer-safe container. Make sure to cover it tightly, and then freeze it until the ice cream is firm. This should take at least four hours. At that point, serve;
