Lemon Cherry Gelato
Lemon Cherry Gelato is a unique flavor. It is rich in creaminess and taste. The recipe for it is very simple. First cherries are roasted. Then mix all the ingredients, whisk them, zest in the lemon, freeze and you are good to go.

1 cup cherries (pitted)
¼ cup sweetened condensed milk
½ cup heavy cream
1 tsp vanilla extract
1 lemon
Directions
Preheat an oven to 450°F and line a baking tray with parchment paper. Pour the cherries onto the baking tray and spread into an even layer. Roast the cherries for 10 minutes until they start to burst and ooze their juice. Remove the baking tray from the oven and allow the cherries to cool.
Into a mixing bowl add the condensed milk, heavy cream and vanilla extract, using an electric whisk beat the mixture to form soft peaks.
Zester a lemon into the mixing bowl then pour in the roasted cherries, fold the lemon and cherry to incorporate into the mixture.
Transfer the lemon cherry gelato to an airtight container and cover, place in the freezer for at least 6 hours.
Remove the lemon cherry gelato from the freezer 5 minutes before serving.
Once ready, enjoy your gelato.
Note
- If fresh cherries are unavailable, substitute with frozen cherries or maraschino cherries.
- If you are allergic to citrus fruits i.e. Lemon, then you can skip the lemon ingredient and make the gelato with cherries only.
