2 cups heavy cream
1 cup frozen strawberries
¼ cup monk fruit sweetener
Directions
Place the heavy cream, strawberries, and monk fruit in the pitcher of a blender or bowl of a large food processor. Blend until smooth, stopping every so often to scrape the sides of the pitcher or bowl.
Stop the blender and pour the mixture into ice cream trays. Freeze for at least 1 hour.
Remove the ice cube trays from the freezer. Pop the cubes out and put them in the pitcher of a blender or bowl of a food processor.
Blend on medium to high for a couple minutes or until smooth and creamy.
Enjoy immediately or scoop the ice cream out of the blender and spread it in a flat freezer-safe container. Return the remaining ice cream freezer. This Keto Ice Cream can be stored in the freezer for up to 3 weeks.
