1. Pumpkin Pie Ice Cream:
Since Halloween is around the corner, this ice cream recipe is perfect for the season. Pumpkins have always been so delicious that I can’t resist but try this ice cream. Follow the recipe below to make this at home.
Ingredients:
- 1 cup of whole milk
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- ¼ cup light brown sugar
- pinch of salt
- 2 tablespoons of cornstarch
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 + ¼ cup of canned pumpkin
Directions:
- In a small bowl, combine 2 tablespoons of whole milk with cornstarch, vanilla, cinnamon, and nutmeg. Stir until the cornstarch has dissolved.
- Next, combine the rest of the milk with the heavy cream, granulated sugar, light brown sugar, and salt in the saucepan. Set aside.
- In a bowl, prepare an ice bath for the saucepan. This will be used to chill the ice cream base afterward.
- Move the saucepan with the milk mixture to the stove and bring to a simmer on medium heat. Once the mixture is at a steady simmer, heat the mixture for 6 minutes, stirring with a whisk.
- Reduce heat to low and, while stirring, add cornstarch mixture.
- Then, increase back to medium heat and cook for another 2 minutes, stirring constantly. You should feel the mixture thickening.
- Remove from heat and stir the pumpkin into the mixture.
- Next, submerge the saucepan into the ice bath. Keep stirring! This will help cool the ice cream base more quickly and evenly.
- Once the mixture has cooled down place it in an airtight container and let refrigerate for an hour.
- Then add the mixture to the ice cream maker and turn it on. Make sure you follow the directions of your ice cream maker. It took about 20 minutes for my ice cream to churn and set up.
- Scoop the ice cream into freezer-safe pans, cover with airtight lids, and freeze overnight.

Ingredients:
For Cranberry Puree:
- 1/4 Cup Water
- 1/4 tsp Salt
- 12 oz Fresh Cranberries, cleaned & sorted
- 2 Tb Fresh Squeezed Orange Juice
For Ice Cream:
- 1½ Cups Heavy Cream
- 1½ Cups Whole Milk
- 1 Cup Sugar
- 1¼ Cups Cranberry Puree
Directions:
For Cranberry Puree:
- Over medium heat – cook the water, salt, and cranberries for 6-7 minutes.
- Remove from heat and allow to cool for about 10 minutes.
- Puree the cranberries and orange juice in a blender or food processor. (will make about 1¼ cups of puree)
- Refrigerate cranberry puree for several hours or until cold.
For Ice Cream:
- Place your desired ice cream container into the freezer. I use a loaf pan.
- Mix together the cream, milk, sugar, and cranberry puree.
- Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
- Once the mixture is frozen and creamy, transfer to the cold ice cream container.
- Freeze for at least 4-6 hours.
- Thaw for 5-10 minutes before serving.
