Steps To Make Keto Ice Cream Bars

For the brownie batter, you will require two identical square-shaped molds that are oven friendly. The reason why they’re identical is required is because you will need to stack them on one another like a sandwich. Like any other baked item, it is a good idea to line the baking tray with parchment paper and cooking spray to ensure that the brownie doesn’t stick to the tray. You can use Pyrex dishes or baking tins. It is also important that you use a 9 in.² tin. Nothing bigger and nothing smaller since that will disrupt the thickness and amount of the brownie batter.
Brownie Batter Making
The next step is making the brownie batter for the ice cream bars. It is important that you use room-temperature butter, which is slightly softened for an easy beating. 1/2 cup cocoa powder
1 cup + 2 tablespoons allulose
One teaspoon of baking powder
3/4 cup + 3 tablespoons butter

2 pints of keto ice cream
Directions
First, line two 9-inch square baking pans with parchment paper and set aside. It’s a good idea to batter them as well.
In a microwave-friendly bowl, add butter and keto chocolate chips and microwave it until mostly thawed. Then, mix it until incorporated. Add eggs and whisk until well beaten.
Then one by one add the dry ingredients to the batter. First, add the almond flour, then add cocoa powder, allulose, baking powder, and vanilla essence and mix until a thick and smooth consistency is achieved.
Distribute the brownie batter amongst the two lined baking tins and spread it into a thin and even layer. Add a piece of parchment paper to both of the pans. With your spatula, Gently spread the batter evenly to all four corners.
Now take another piece of parchment paper and gently place it over through. Evenly distributed, brownie batter. Make sure to slightly press it with your hands. Repeat the same thing with the second brownie pan.
Bake the brownies in a preheated oven for 12-14 mins. Now peel the top layer of parchment paper before letting the brownies cool down in the pans for 10 mins. After 10 minutes, remove the brownies from the baking pan and allow them to cool.
Take your keto ice cream from the freezer and allow it to soften a little. Take a spoon and stir the thick ice cream until it has a peanut butter texture for easy spreading.
Dollop portions of the gelato onto the brownie in the pan. Spread it evenly and add the other brownie layer on the top like a sandwich.
When it is completely frozen, use a sharp blade to slice it into 9 bars. Serve and enjoy!
