To put the difference simple, gelato is much more creamier and lighter than ice cream. Because it is made from whole milk instead of heavy cream, it contains less fat. But, in some rare cases, the combination of both milk and cream is used for gelato. To put it simply, Gelato is better than ice cream.
This homemade chocolate gelato recipe is for Sicilian chocolate gelato, which is even further from American ice cream than the gelato served in northern Italy. Sicilian gelato does not contain cream or eggs; it uses as a base what is called crema rinforzata, made from milk, sugar, and cornstarch. The result is a gelato that is both lighter and more intensely flavored than American ice cream or Northern Italian gelato (which is usually made with an egg-based custard).
This Gelato is different from American ice creams. This is in two ways. First, this gelato contains less fats than ice cream. Second, it is churned slower which pumps less air in it than ice cream. Chocolate Gelato Recipe
Chocolate Gelato is a creamy and tasty gelato. It is made from bittersweet chocolate and tastes super good. The recipe to make it is also simple. Simply preheat the milk, add chocolate and other ingredients, stir, return to heat, stir again, let it cool and freeze. Then add to ice cream maker and you are good to go.

3 cups whole milk
0.25 lbs bittersweet chocolate, chopped coarsely
1/4 cup unsweetened cocoa powder
3/4 cup sugar
2 tbsp cornstarch
Directions
Place 2 cups of the milk in a medium saucepan over medium heat. Remove from the heat when milk just begins to simmer.
Add chocolate to the hot milk and stir in until completely melted.
Combine remaining 1 cup of milk, cocoa powder, sugar and cornstarch in a bowl, then stir into hot milk and chocolate mixture.
Return pan to medium heat and cook, stirring until mixture thickens, approximately 10 minutes.
Remove from heat and let it cool to room temperature. Transfer to a bowl, cover and refrigerate overnight.
Process in an ice cream maker according to manufacturer’s directions.
