Blueberry Goat Milk Frozen Yogurt
This Blueberry Goat Milk Frozen Yogurt is very tasty and healthy. It is prepared from blueberries (frozen or fresh) and goat milk along with sugar, lemon juice, honey and vanilla extract. If provided with all these ingredients, you can make this frozen yogurt at home in only 10 minutes.

- For Blueberry Compote:
2 cups fresh or frozen blueberries
¾ cup sugar
2 tbsp freshly squeezed lemon juice
- For Frozen Yogurt:
2 ½ cups goat’s milk yogurt
½ cup sugar
½ cup honey
1 tbsp vanilla extract
Directions
At first, you must make the compote. To do this, add the blueberries, sugar, and lemon juice into a small nonreactive saucepan. Aluminum or stainless steel will work – the acid from the lemon juice and the berries will react with copper or cast iron, though.
Bring the mixture to a simmer over medium-low heat and cook, stirring every now and then, for ten to fifteen minutes. Make sure to stir the mixture occasionally, or it may burn to the base of the pan.
Remove the compote from the heat, and then pour it into a shallow pan or bowl. Make sure to place it in the fridge to chill completely, which should take about an hour.
Now that we’ve sorted that out, we can move on to the frozen yogurt. To begin, combine the yogurt, sugar, honey, and vanilla in a large bowl. Whisk the mixture until the sugar and honey are completely dissolved – don’t be afraid to be a bit aggressive with it: you may need to be to get the sugar to dissolve in the cold mixture.
Place the mixture in the fridge to chill thoroughly – this should take about an hour.
When the yogurt mixture is cold, pour it all into an ice cream mixture, making sure to process it according to the manufacturer’s instructions.
While that’s ongoing, take the blueberry yogurt out of the fridge.
Transfer a quarter of the yogurt to an airtight container, and top with a third of the compote. Continue this until all of the yogurt and compote are layered. Cover everything tightly and then freeze the mixture until the yogurt is nicely firm – this should take at least four hours.
